Gatorade Muffins From The Mythical Cookbook
I messed up...but it was okay.

I'll be the first to admit that I'm not always the greatest at following recipes. I know I should read the the whole thing from top-to-bottom before starting, but I very often don't. This bad habit has already bitten me in the butt—it all worked out, though.
So, Gatorade Muffins. I love Gatorade, and I love muffins, but really it was just the absurdity of the name that got me. How can you not want to try something called Gatorade Muffins? I'm down to hydrate while eating breakfast-coded cupcakes any day of the week.
The first thing to do in this recipe is reduce two 28oz bottles of Cool Blue Gatorade down to 1 cup. Josh says it should make a thick syrup, but that was not the case for me. The real problem, however, was I did this step several days before making the muffins, which ended up being my first mistake.


The next thing to do was cream the butter and sugar together, then slowly add the eggs. No problems there. After that, the Gatorade reduction joins the party. As I said, mine had been chilling in the fridge for a few days, and I didn't think about that. The cold liquid immediately seized up the butter. Oops. A quick trip the microwave got me back on track.
One mistake was actually two because I poured all of the Gatorade reduction into the mixture. This is where my poor recipe prep came back to haunt me. Josh says to pour in the Gatorade, but the ingredient sidebar clearly notes "1/2 cup" in the muffin section. There's supposed to be some for the streusel, too. Oops again. I'm sorry, Josh.

To make things right, I used corn syrup tinted with blue food coloring in place of Gatorade in the streusel. This was when I really wished there was a photo of Gatorade Muffins in the cookbook. I've made streusel topping maybe three times in my life, and it never involved a sports drink. The final product was crunchy but not very attractive.
Despite my many mistakes, the Gatorade Muffins came out very tasty. Just like the Fruity Pebble Pancakes, these weren't as sweet as I expected—even with an extra 1/2 cup of sweet Gatorade nectar. They were, however, extremely moist, and I ate three just while taking photos. I can't wait to pack a few of these instead of my water bottle on my next bike ride.
