Girl Dinner Pizza
It had no right to be this good.
First of all, if you're not familiar with the term "Girl Dinner." you're missing out. It's essentially any sort of charcuterie-esque or incredibly random assortment of items thrown together for a meal. The term came about a couple of years ago, but it's a timeless concept, and certainly not exclusive to one gender.
One of me and my wife's favorite things to do is wander around a local market and pick out things for a Girl Dinner. The specific components are always different, but we have a bit of a formula. You need a cured meat, cheese, crackers or chips, some sort of pickled thing, and a dip or spread. This week, my wife had the idea to put Girl Dinner on a pizza.
Here's the full run down of ingredients we picked out:
- Bachan's Sweet Pineapple Japanese Barbecue Sauce
- Kettle Brand Krinkle Cut Dill Pickle Chips
- Honey Goat Cheese
- Diced Pancetta
- Sliced Green Olives
- Mozzarella Cheese

Japanese barbecue sauce is closer to soy sauce than American barbecue sauce, so I put a very thin layer down. Everything else except for the chips went on for the bake—those were sprinkled on afterward.
I had a hunch that potato chips on pizza would be great, but I was not expecting everything else to work so well together. The pineapple barbecue sauce provided some sweetness and saltiness, and those flavors were bolstered by the honey goat cheese and pancetta. The briney green olives kept all that richness from being too much, and the kettle chips added great texture.
Regardless of how you identify, a good Girl Dinner is something everyone can enjoy. I'm going to have to test this again some time with a completely different lineup of items.
