Rhubarb Bacon Feta Pizza

The Pizza Friday tag has been feeling pretty lonely. It's not that I don't eat pizza—believe me, that's not the problem—I just haven't been feeling very inspired. In an attempt to change that, I did some web searchin' and came across Rhubarb, feta, and bacon pizza on Reddit. Let's give it a shot.

The big question was how to prepare the rhubarb. Raw rhubarb is not very good, and even cooked rhubarb can be unpleasantly tart. I knew the bacon and feta would be salty and savory, so I decided to treat the rhubarb like pie filling. That meant cooking it down with a bit of water, apple cider vinegar, and a heap of sugar.

Assembly was just a matter of spreading the rhubarb mush on the dough and topping with feta cheese and bacon. I like to pre-cook the bacon until it's about 3/4 of the way done so it can finish in the oven. And that's all there was to it.

This pizza was okay. I wasn't super happy with how my dough came out, and I should have cut the bacon pieces smaller. Flavor-wise, though, it was decent. The rhubarb was still a bit tart, but mostly sweet. It played nicely with the savory bacon and feta. I'm sure it would be better on a second attempt, but I probably won't make it again.
